Frozen fun
Tonight Jim made dinner for himself. Impressive, huh? Well, he had a little help from me. I had made the stuffing previously and frozen it. Last night I put it in the fridge to defrost, so it was good to go today. Giada has a recipe for stuffed bell peppers that consists of ground turkey, cheese, parsley, egg, breadcrumbs, ketchup, onion, salt, and pepper. It's a super easy mix that freezes well and creates an extremely quick meal in a pinch. Jim took a red bell pepper, sliced it in half lengthwise and stuffed the halves with the turkey mixture. Some jarred spaghetti sauce went on top and the peppers were baked at 400 degrees uncovered until the meat thermometer said they were done (internal temp of 165).
